The wines of Sancerre on the Upper Loire are perhaps the easiest in France to recognise. On the chalky hills cut by the river, the Sauvignon grape gives a smell to the wine that is called gunflint. It is slightly smoky and green, lightly spicy. Especially good with seafood, as this wine as bone dry.
